A sweet and savory stew with shrimp and a bit of spice. Adaptation from my grandmother’s recipe.

Ingredients
- 2 cups Green Bell Pepper, diced
- 1 5-inch Yellow or White Onion, diced
- 2 cups of Celery, diced (try to get one with lots of green leaves)
- 1/4 cup of olive or cooking oil
- 1 cup Heinz chili sauce (it looks like ketchup but is not)
- [optional] 3 tbsp Frank’s RedHot sauce
- 1 cup of seedless Golden Raisins
- 1 cup of Slivered Almonds
- 3x 14.5oz cans of diced tomato - optionally blend one
- 1 teaspoon each: pepper, thyme, salt
- 2 tsp curry powder
- 1/2 cup parsley
- 2 lb cleaned and shelled shrimp
- cooked white rice
Directions
- Sauté raw vegetables in oil
- add remaining ingredients except shrimp
- simmer 1 hour
- Add shrimp and cook for 5 minutes
- Serve over cooked rice
